Lauren Noblitt is a 26-year-old Indiana native that moved to Florida in 2013. She began her hospitality journey a decade ago working at a small family owned restaurant in Sarasota, FL. After moving to Miami for her studies, she continued to work in the hospitality industry. It was in 2017 at Finka Table & Tap where she explored a whole new part of hospitality that she did not know she loved, the bar. It was also at Finka Table & Tap where she met her partner, Eileen Andrade, who owns several concepts in Miami such as: Finka Table & Tap, Barbakoa by Finka and Amelia’s 1931. Together, they have become Miami’s female duo of all things bar and food. Alex Aportela, Finka & Amelia’s Beverage Director, has been a big inspiration and mentor for Lauren during her growth in the craft cocktail world. Lauren currently works closely with Eileen to manage all three restaurants and is in charge of Barbakoa by Finka’s seasonal cocktail list.
